We get so many requests for the recipes we have at the shop on a seemingly daily basis...So, We decided to give the recipe of the week it's own category! All the recipes will be archived in the FREE GOODIES category if you miss one. Maybe, with a little luck, Someday there'll be a movie-- Erin & The Gramma's...and Tony...and the Today show...and Rachael Ray...and so on...!!

As seen on the homepage and as promised, here is the soon-to-be world famous cupcake and buttercream frosting recipe from the book CUPCAKE! by Charise Mercile-Harper 

Deliciously Plain Vanilla Cupcakes 

Ingredients:

2 Cups all purpose flour                     4 Eggs, Separated

3 Teaspoons baking powder               1 cup 2% Milk

1/2 teaspoon salt                              1 1/2 Teaspoons Vanilla

 1/2 cup butter

1 1/2 Cups Sugar 

Preheat oven to 350. Line cupcake pans with paper liners. Combine flour, baking powder & salt. Set aside. In a new bowl, combine butter, 1 cup sugar, egg yolks, milk and vanilla. Now add dry ingredients to this mix. Mix @ low speed for 2 minutes. Scrape bowl. Whip up remaining sugar with egg whites, mixing at high speed until fluffy and smooth.  Fold into batter, fill liners about 2/3 full, DON"T OVERFILL! Bake 20-25 minutes or until a toothpick comes out clean. Cool 10 minutes in pans and place on a wire rack to cool completely. Frost with Buttercream Frosting!

Deliciously Plain Buttercream Frosting 

1/2 Cup butter, softened                     1/4 teaspoon salt

4 cups powdered sugar                      4-5 teaspoons milk

4-5 teaspoons milk                            2 teaspoons vanilla

In a large bowl, cream butter until very fluffy. Add part of the sugar and the salt, then beat again. Continue adding sugar and milk in small batches, alternately, beating until fluffy. Stir in vanilla. Frost your cupcakes! Yum Yum!!
